Roasted Pepper Wraps

Ingredients

2 red peppers, sliced

1 avocado, sliced

1/2 cup cucumbers, sliced thin

1 cup spinach

1/4 cup original hummus

salt & pepper

1/4 teaspoon garlic powder

1 Tablespoon avocado oil

4 tortillas (use GF if needed)

Directions

Preheat oven to 400F. Drizzle red peppers with olive oil and season with sprinkle of sea salt, black pepper, and garlic powder (1/4 teaspoon). Roast for 20 minutes.


First spread 1 to 2 Tablespoons of hummus on tortilla, then sprinkle spinach leaves, thinly sliced cucumbers, avocados, and roasted red peppers. Wrap and enjoy!
