Lemon Herb Salmon

Ingredients

1 lb Organic Wild Caught Salmon

1 tbsp olive oil

1/2 tsp garlic powder

1/4 tsp lemon zest

2 tsp lemon juice

1/2 tsp (each) fresh oregano, basil, thyme

1/4 tsp salt

1/4 tsp black pepper


to serve:

rice/quinoa

veggies (broccoli, asparagus, etc.)

Directions

Preheat oven to 375F.


In a small bowl mix olive oil, garlic powder, lemon zest & juice, herbs (basil, thyme, oregano), salt, and black pepper. Place salmon in cast iron skillet and brush with oil & herb mixture.


Bake salmon for 15-20 minutes - or until salmon is cooked through. The time will depend on how thick/thin your cuts of salmon are.


I served this with vegetables, with a side of rice/quinoa. Enjoy!
