Sweet Potato Curry

Ingredients

1 garlic clove, chopped

1 tsp olive oil

1 tbsp red curry paste (find one without additives and coloring)

1 small potato

1 small sweet potato

220g broccoli

1 can coconut milk (about 400ml)

150ml vegetable broth

1 handful kale

1/2 lemon, juiced (optional)

1 tsp maple syrup (optional)

120g brown rice, cooked

Directions

Place the chopped garlic into a pot and add the olive oil and red curry paste. Cut the potatoes into bite size pieces and the broccoli into small florets. Add to the pot and stir. Add the coconut milk and vegetable broth and simmer until the veggies are soft. At the very end, cut up the kale and add to the pot. Stir into the curry and serve with cooked brown rice.
